An Abundance of Basil- Two Ways


It is now officially summer! Hurray! It seems as if it has been here for awhile now but perhaps that is because I have been cooking and preparing some of my favorite summer meals for the past few weeks. Something about fresh basil just screams summer to me. I get so excited when it is in season that I try to incorporate it into almost all of my dishes. I think my mother in law might be in the same mindset because when she saw a 3-pound bag of fresh basil on sale at the local farmstand, she bought a few bags! Needless to say, I ended up with a lot of fresh basil on my hands. Here are two of my favorite recipes to make when I have an abundance of fresh basil.

Green Goddess Dressing

1/2 cup of mayonnaise

1/2 cup of sour cream

Juice of half a lemon

1 clove of garlic, minced

1 cup of fresh basil leaves

2 green onions, chopped

1 teaspoon of sea salt

1 teaspoon of freshly ground black pepper

Instructions

Place all ingredients into a food processor and mix until well-blended. Keep refrigerated.

Basil Pesto

5 cloves of garlic, peeled

1/2 cup of freshly grated Parmigiano-Reggiano cheese

3 cups of basil leaves

1 teaspoon of salt

pinch of red pepper flakes

3/4 cups of olive oil

Instructions

Add garlic, cheese, basil leaves, salt, and red pepper flakes to food processor. Turn to on and slowly drizzle in olive oil through top opening. Use more olive oil if you want a thinner consistency. Store in refrigerator or freeze for a later use.
