Avocado and Bacon Sandwich with Garlic Aioli, Part of a Deconstructed BLTA Lunch

One of my favorite meals of all time is a BLT, or a Bacon Lettuce and Tomato sandwich. In California, the BLTA (that's the addition of Avocado) is immensley popular and with California being my homestate, I am often drawn to anything with avocado. Have you ever noticed that when something on a menu uses the word "California" that it usually means it comes with avocado? When we lived in New York in the 90's, my dad was at a business meeting in Manhattan and everyone was ordering lunch. He ordered a burger with avocado and he says they all looked at him like he was crazy. Definitely a California thing. Mmmmmm avocado....

Ok, back to this meal. As I mentioned before the lovely avocado distracted me, I love a good BLTA. I can eat it at any meal! I've oftened ordered a BLT for breakfast when I don't feel like having heavy pancakes or waffles. I've created this deconstructed BLTA with the idea that it would be a lunch but you could make it into a dinner too. The first part of the meal is the B and the A, the bacon and avocado. This is a super simple and very delicious sandwich that only requires bacon, a ripe avocado and some garlic aioli. Avocado and Bacon Sandwich

with Garlic Aioli

makes 2 sandwiches

  • 1 ripe avocado

  • 6 pieces of bacon, cut in half

  • 2 torta rolls or other soft roll, sliced in half

  • 1 clove of garlic, minced

  • 1/4 cup of mayonnaise

  • Freshly ground black pepper


Preheat your oven to 400°F. Lay bacon on a baking sheet and roast in the oven for 15-20 minutes (watch carefully so your bacon doesn't burn). Lay on papertowel lined plate to cool. Slice avocado. Mix garlic and mayonnaise in a small bowl. Spread garlic aioli generously onto each side of the torta roll. Layer bacon and avocado slices onto bottom piece of torta roll. Sprinkle with pepper. Top with remaining slice of torta roll. Enjoy!
