An Autumn Evening Picnic | Pork Tenderloin Sandwiches

Last week, before it started raining nearly everyday, I wanted to make sure that we were able to take advantage of the beautiful, crisp autumn evenings. The first time I visited Seattle, the one thing I really noticed was all the water. There is a lake almost everywhere you turn! One of these lakes (Greenlake, for locals) has a 3 mile walking path around it. So, not only do you get your exercise in for the evening but you also get stunning views.

I decided to pack a simple picnic for us to eat after our walk. We went on our adventure the Monday after Sunday Supper, so I was able to use leftover Pork Tenderloin to made some delicious sandwiches. Along with the sandwiches, I made a simple artichoke and jalapeño dip, packed some pita chips, grabbed some olives from my grocery store's olive bar, and threw in some of the apples and apple cider we got from our trip to the Apple Orchard. I packed real dishes and silverware, cloth napkins, wrapped our sandwiches in wax paper tied with baker's twine, decanted the cider into a glass milk jug, and brought some mason jars for us to drink out of. These little touches really turned this simple picnic into something very special.

Pork Tenderloin Sandwiches

with quick-pickled red onion

1/2 Red Onion

Red Vinegar

1/2 Loaf of French Bread

Leftover Pork Tenderloin, Sliced (Recipe Here)



Yellow Mustard

First, prepare the pickled onions. Slice the red onions and place in a container with a tight-fitting lid. Add enough vinegar to cover the onions, put the top on and shake the container a few times. Let it sit in the fridge while you prepare the rest of the sandwich. Slice the French bread in half and then slice each half lenght-wise so you have enough bread for 2 sandwiches. Put mustard on the bottom slices, mayonnaise on the top. On the bottom slice, lay out the pork and then cover with arugula. Put some of the pickled onion on the top slice, put it all together and wrap in wax paper, tied with baker's twine.

It is no wonder autumn is a favorite season for many

Something about it makes me want to slow down and appreciate my life and the wonderful people in it

And the beautiful place I live!
