Last night my farm table where we eat our nightly dinners was covered with the contents of my old desk. Alex and I are in the middle of a fun (well, fun for me) project that involved a trip to Home Depot to pick out unfinished base cabinets to make into my new work station. I envision a long table where I can easily use my sewing machine and layout all sorts of crafts for Lucia and I to do, as well as plenty of storage underneath.
I am currently in full spring cleaning mode. I have so many arts and crafts supplies (do any of my readers have that problem, too?) and I am going to need to trim down my collection. Seeing everything laid out on my table was a bit overwhelming but I need to make room for the lovely little things I have and get rid of the not-so-lovely (big?) things.
So, needless to say, with my table in use, we pulled out the t.v. trays and I threw together this easy dinner. We paired this dinner salad with French Onion Soup (click for recipe) but ommitted the bread and cheese part to make it lighter. The three of us sat on the couch, turned on Turner Classic Movies, and enjoyed a nice casual evening together.
with Buttermilk Dressing
1 head of red-leaf lettuce, torn or cut into bite-sized pieces
2 cups arugula
2 hard boiled eggs, sliced
3 pieces bacon, chopped
1 carrot, shredded
Freshly ground black pepper
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup buttermilk
2 tablespoons fresh chives, diced
1 large garlic clove, minced
1/2 tsp salt
1/2 tsp sugar
1/4 tsp freshly ground black pepper
dash of paprika
Prepare the dressing by whisking all ingredients in a medium bowl. Taste for seasoning and adjust if necessary.
Prepare the salad by combining all ingredients in a large salad bowl. Drizzle with the buttermilk dressing and sprinkle with freshly ground black pepper. Serve immediately. Store unused dressing in the fridge.
