Fresh Pea & Corn Soup


Spring is turning into my favorite season for cooking. It might be taking over Autumn's spot on my favorite list. Maybe it is because after a harsh winter, Spring's seasonal harvest seems so fresh and bountiful. I love artichokes, asparagus, peas, and all that Spring has to offer.

This recipe for Fresh Pea & Corn Soup is really like Spring in a bowl. Every ingredient is either green or yellow, two of the springiest colors out there. Everything is fresh and light and beautiful, just like Spring.

The recipe calls for crème fraîche and I highly recommend trying to find it. You can substitute sour cream but the crème fraîche adds a certain tanginess that sour cream won't. The difference between the soup without the crème fraîche and with is phenomenal. It goes from being a "healthy tasting" soup to something gourmet that you could find at any fancy restaurant. Also, if you can find fresh peas and corn, by all means, use them! If not, frozen works great. The idea behind calling this a "fresh" soup is that it is not made with dried peas but fresh ones.

Fresh Pea & Corn Soup

3 tablespoons olive oil

2 leeks, washed throughly and cut into half-moons

1 small onion, chopped

1 quart chicken stock

1 pound sweet peas (fresh or frozen)

1 pound sweet white corn (fresh or frozen)

1/4 cup fresh mint, chopped

1/4 cup fresh chives, chopped, plus more for serving

6 oz crème fraîche

Heat the olive oil over medium heat in a large, heavy-bottomed saucepan. Add the leeks and onion and cook until tender. Add the stock and water and bring to a boil. Once the soup is boiling, add peas, corn, mint, and chives. Cook 3-6 minutes or until peas and corn are soft. Add salt and pepper to taste and remove from heat. Blend soup with an immersion blender or a stand blender in batches until desired consistency is achieved. Serve with a dollop of crème fraîche and a sprinkling of chopped chives. Soup can be served hot or at room temperature.
