Very Vanilla Bean Waffles

Saturday mornings at our house usually involve some sort of scone. I like to use up berries leftover from the week during the summer months and do the same for the rest of the seasons' best fruit. My all-time favorite scone has to be the simple Vanilla Bean Scone (I've posted a couple of scone recipes but will post this simple one soon). I can make them any time of the year, they are never out of style! Alex has come to love scones too, but his breakfast heart really belongs to waffles.

This recipe is a "marriage" of our favorite breakfasts. It has the vanilla bean flavor for me and waffles for Alex. I use both vanilla bean paste and vanilla bean sugar in this recipe. Tomorrow I will post a simple recipe to make vanilla sugar at home. It is easy to make and it has become a pantry staple in my house. We use it in scones, pancakes, cupcakes, and now these waffles. The vanilla bean paste is optional. You could use vanilla extract if you want the "Very Vanilla" effect but don't have vanilla bean paste (another pantry staple in this house). If you want "Very Vanilla Extreme", you could serve these with Vanilla Bean Syrup (recipe here)!

Very Vanilla Bean Waffles

2 eggs

2 cups flour

1 3/4 cups milk

1/4 cup vanilla bean sugar (recipe here)

1/4 cup vegetable oil

1/2 teaspoon vanilla bean paste (optional)

1 Tablespoon baking powder

1/2 teaspoon salt

for serving

pure maple syrup


Preheat your waffle iron. Whip eggs in a large bowl until fluffy, about 5 minutes. Add the remaining ingredients and mix until combined. Some lumps are ok. Spray your waffle iron with non-stick spray and pour directed amount of batter into iron. Cook until golden brown and serve hot!
