If you haven't noticed yet, let me tell you I love vanilla beans! I use them as often as possible. Vanilla Bean Sugar has become a pantry staple in my household. I like to use it in scones, pancakes, coffee drinks, and my Very Vanilla Bean Waffles (recipe here). This is a simple recipe where you only need 2 ingredients. I like to make 5 cups of sugar and store it in an airtight container in my baking pantry.
Vanilla Bean Sugar
5 cups white sugar
1 whole vanilla bean
Split the vanilla bean in half, lengthwise.
Scrape the inside of each side with the back of a knife to get the seeds out. Once you feel like you have retrieved most of the seeds, add the seeds and the sugar to your food processor. If your food processor is not large enough to hold all 5 cups, do a smaller amount and then combine with the rest of the sugar before you put it in a canister. Pulse the sugar until the seeds are dispersed.
Store in an airtight container. I like to keep the used vanilla bean pods in the container to add more vanilla flavor. Enjoy!
