Cherry Cupcakes

These cherry cupcakes are a real show-stopper. Not only do they look gorgeous, but they taste delicious too! I made them a few weeks ago with cherries from our Farmer's Market. We just went to the Farmer's Market yesterday and there are still cherries available so if you hurry, you might still be able to grab a few bright red cherries and make these beauties for your family and friends. Cherry Cupcakes

1 3/4 cups flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup softened butter

2 cups sugar

4 eggs

1 cup milk

1 teaspoon almond extract

1/2 cup cherries, pitted and minced

for buttercream

1 cup softened butter

4 cups powdered sugar

1/2 cup cherries, pitted and minced

1 teaspoon almond extract

1 drop of red food coloring (optional)

whole cherries for garnish, about 24 (optional)

In your stand mixer fitted with the paddle attachment, cream the butter until smooth. Add the sugar gradually and beat until light and fluffy. Add the eggs 1 at a time and beat well after each addition. Combine the flour, baking powder, and salt in a medium bowl and set aside. Add the dry ingredients to the mixer in 3 parts, alternating with the milk and almond extract. After each addition, beat until the ingredients are incorporated. Stir in the minced cherries. Spoon the batter into the cupcake tins with liners. Bake for 20 to 25 minutes, or until a cake tester inserted into the center of the cupcake comes out clean. Let cool completely before frosting.

To make the buttercream

Whip the softened butter in your stand mixer fitted with the paddle attachment until smooth. Add powdered sugar and mix together until it has all incorporated. Add cherries, almond extract and food coloring. Whip for about 5 minutes on high until light and fluffy. Add more powdered sugar to thicken, or milk to thin to desired consistency. Use a piping bag fitted with a star tip to frost the cooled cupcakes. Add a cherry on top if desired and enjoy!
