3-Bean Salad | The Perfect Potluck Side Dish

Do you remember the post about the Family Cookbook I asked my grandfather to make for me? Well, for my 21st birthday, I asked my Mom to make me one too! I wanted not only traditional family recipes but also recipes that she likes to use. The resulting cookbooks is one of my most prized possessions. Alex's mother hosted a barbecue this past weekend for a visiting family member and asked us all to bring a side dish. I flipped through the cookbook from my mom and found this recipe. She and her brother, my Uncle Mike (who passed away quite a few years ago), made it for my grandfather's 70th birthday party so I thought it would be the perfect side dish to bring to the party. I used fresh, organic green beans from our Farmer's Market and organic canned beans from the grocery store. You could definitely make the beans from dried beans (it would take significantly more time) but the canned beans work just fine.

3-Bean Salad

Mikey and B's Speciality

1/2 pound fresh green beans, cut into thirds

2 teaspoons dijon mustard

2 tsp sugar

1/4 cup red wine vinegar

1/2 cup olive oil

15 ounce can garbanzo beans

15 ounce can red kidney beans

1/2 cup fresh Italian parsley, chopped

salt and freshly ground pepper

Steam the green beans for about 8 minutes or until just soft. Rinse under cold water to stop cooking. Set aside. Combine mustard, sugar, vinegar, and oil in a blender or food processor (I used my immersion blender) and pulse until well blended. Add to remaining ingredients. Season with salt and freshly ground pepper to taste. If not serving immediately, refrigerate until ready.
