Lately, I have really been craving a nice warm cup of hot cocoa. There is something about snowy days that just calls for cozy sweaters and socks and a dreamy cup of hot cocoa. As much as I love the ease of making a cup from cocoa powder and sugar, making it from real chocolate adds a decadent factor that makes the whole experience so special. I even pulled out my wedding china from our hutch for this one! I love dark chocolate (hello 80% and up!) and I prefer a dark chocolate hot cocoa too. This recipe uses both unsweetened and bittersweet chocolate with just a little bit of sugar. Of course, you can adjust the sugar to your liking. Alex doesn't like regular milk so I made him a batch with unsweetened vanilla almond milk and it was delicious. You can sub whatever milk works for you and your family. Here's to snowy days and hot cocoa by the fire!
Decadent and Dreamy
Dark Hot Cocoa
4 cups whole milk or almond milk
2 tablespoons sugar
2 ounces unsweetened chocolate, grated or finely chopped
4 ounces semi-sweet chocolate, grated or finely chopped
1 cup heavy cream
1 tablespoon powdered sugar
vanilla bean paste (optional)
Heat the milk and sugar in a saucepan on medium heat until it is almost boiling. Remove from the heat and stir in the chocolate until dissolved. Whip the heavy cream until whipped cream is formed. Add the powdered sugar and a dollop of vanilla bean paste (if you wish) and whip for another minute. Serve the hot cocoa warm with some fresh whipped cream on top.
