Homemade Pasta with Truffle Cream Sauce | A Beautiful Start to the New Year
Two thousand seventeen. Twenty-seventeen. 2017. Any way you say it, it is here and in full swing! We started off New Year's Eve with a decadent meal of Homemade Pasta with a Truffle Cream Sauce. George was only a few days old and thankfully, my mom was still in town (or else this meal never would have happened. Thanks Mama!). Lucia really loves to help in the kitchen. She is always up for "baking cookies" and "baking pasta" was just as exciting for her. I will eventually have to teach her that not everything in the kitchen qualifies as "baking" but it is so sweet when she says it.
Even though the New Year has been here for over 2 months now, I've finally found my inspirational word for the year. My word of the year is something for me to keep in mind with all that I do. As a new mom of two, I think this is an important word to remember. My word is: BEAUTIFUL.
Not only do I want to surround myself with my BEAUTIFUL family and friends, I also want to make sure that I feel BEAUTIFUL each day. How can I make my day more BEAUTIFUL? I can make a BEAUTIFUL dinner. I can listen to BEAUTIFUL music and place BEAUTIFUL flowers around my home. I can show my children the BEAUTIFUL city/state/world we live in. I can make sure that only BEAUTIFUL words come out of my mouth. I can use the BEAUTIFUL clothes/shoes/makeup that I have every day instead of saving them for special occasions. As a busy mom, it is easy to give yourself up and devote everything you have to your kids. This year, I am determined to remember to take care of myself AND my kids in a loving and BEAUTIFUL way. Won't you join me?
2 cups all-purpose flour
On a large board or counter space, make a mound with the flour. Make a well in the middle and crack the three eggs into it. Using a bench scraper (or two forks), gently incorporate the flour into the eggs. Knead dough until smooth. Add more flour if necessary. Divide your dough into 4-6 pieces. Run each section, one at at time. through your pasta maker on the largest setting. Run the dough through again, with the setting on the second largest setting. Continue going down a notch until you achieve the desired thickness. After the desired thickness is achieved, run it through the part of your machine that cuts it into the thick fettuccine pieces. Lay your fettuccine onto a baking sheet in a single layer. Repeat with remaining sections of dough. If you do not have a pasta maker, use a rolling pin and cut the fettuccine by hand with a very sharp knife.
Add the pasta to a pot of salted, boiling water. Cook for about 3 minutes. You will know the pasta is ready when it floats to the top of the pot. Add sauce (recipe follows) and serve immediately.
Truffle Cream Sauce
3 ounces truffle butter
2 cups heavy cream
freshly ground black pepper
Heat the heavy cream in a saucepan over medium heat until it comes to a simmer. Add the truffle butter, and turn the heat to very low. Stir until the butter melts. Add salt and ground pepper to taste. Keep warm over very low heat until ready to add to your pasta.
